We get asked all the time...."what is the secret to a good pizza?"
Well, there is nothing better than a Woodfired Pizza..... But....
Let's start with the dough - A good "00" Flour, Lukewarm Water, Oil, Salt and our secret .... Sourdough - the active rising agent we use instead of yeast.
Resting or Proving - in the FRIDGE!!! for at least 48 hours, I know it's a long time to wait but it's worth it! Take it out of the fridge a couple of hours before using it.
Hands or Rolling Pin to stretch the dough, totally up to you! (much more fun with your hands though)
Toppings - less is best and keep it simple.
Your oven should be really hot!!! Also put a jug (stainless steel) of water in the bottom of the oven for moisture/humidity.
Let it cook you'll know when it's ready, take it and go for it.
